If you like waking up later on a Sunday, then, you’re a lot like me 🙂 and I suspect we’re the majority. Then, this super easy, sort of healthy ‘pizza’ might be what you need on a very lazy Sunday morning/afternoon brunch. Trust me. There’s nothing not to like about this. There’s the creamy avocado sauce smothered on top of  toasted pita followed by a fried egg with an oozing egg yolk, sprinkled with a topping of your choice – semi-dried tomatoes, crispy bacon (yum!) or just melted cheese. Didn’t I say there’s nothing you won’t like about this breakfast pizza ? Bonus- there’s no ‘real’ cooking involving. Just a bit of avo mashing, egg frying and the oven does the rest of the work.

Breakfast Pizza

Serves 2

  • 4 wholemeal pita
  • 2 ripe avocados
  • 1 tsp cayenne pepper/paprika/chilli powder
  • juice of 1/2 small lemon
  • 1 big heaped dinner spoonful of sour cream/ yoghurt (optional)
  • 1 1/2 tsp sea salt
  • 2 tbsp olive oil
  • 4 eggs
  • as many bacon rashes as you please (optional)
  • sun-dried tomatoes, roughly chopped (optional)
  • big handful of shredded Mozzarella / Monterey Jack cheese (optional)
Preheat oven to 200°C / 390°F. Line a baking tray with your silpat mat or aluminum foil. Once oven is hot enough, put pitas on tray and lightly toast in oven for just about 30 seconds, or until very lightly browned. Remove trays and set aside. Leave the oven switched on.
Meanwhile, for the avocado cream base, scoop out the flesh of 2 ripe avocados into a bowl. Add cayenne pepper/paprika/chilli powder, the juice of 1/2 a small lemon and sour cream/yoghurt. Using a fork, mash up the avocado to your desired consistency. I like mine avo mash a little lumpy.
In a non-stick skillet/pan, fry up some bacon rashes till crispy. Remove and set aside on kitchen paper. (We were out of bacon so our ‘pizzas’ were vegetarian)  In the ‘bacon oil’, fry some eggs till the undersides get slightly browned. Add an extra 2 tbsp olive oil if the bacon oil is very little. Do not overcook the eggs as they would need to be in the oven for the final step.
To assemble the breakfast ‘pizzas’, with a dinner spoon add a big dollop of avocado mash and spread it evenly on the pita tops. Add the fried egg on top of the avocado mash. Generously sprinkle the tops with cheese. Pop the trays back into the hot oven for a few seconds for the cheese to melt.
To serve, sprinkle some roughly chopped semi-dried tomatoes on top and crumble the bacon rashes on top of each ‘pizza’. A side salad of mixed greens and a simple olive oil, balsamic, salt dressing goes great with the ‘pizzas’.
